Ingredients
Mediterranean vegetables of your choice, including:
- Courgette
- Red/yellow/green pepper
- Tomato
- Garlic cloves, skins on
- Aubergine
- Red onion
Method
Chop your vegetables and place in an oven pan. Cover them with olive oil and sea salt and roast at 170 degrees for approximately 35 mins or until cooked. If using garlic, then add 20 mins before the end of cooking.
