Ingredients (makes 10 x 200ml jars)
- 3 Bramley apples about 650g
- 1 large onion, finely chopped
- 1 kg dried figs, finely chopped
- 250g prunes, roughly chopped
- 400ml cider vinegar
- 300g light brown soft sugar
- 1 red chilli, finely chopped
- 1 inch finely grated ginger
- 1 pinch freshly ground nutmeg
- 200g sultanas
Method
This is a really delicious Good Housekeeping recipe. Peel, core and finely dice the apples and put into a large, heavy-based pan. Stir in the onions, figs, prunes, vinegar, sugar, chilli, ginger and nutmeg. Put the pan over a low-medium hob heat and cook, stirring frequently, to warm the mixture through and dissolve the sugar, about 5 mins. Turn up the heat to medium and simmer uncovered for 45 mins, stirring regularly – the final mixture needs to be fairly thick. Stir in the sultanas and cook for a further 5-10 mins. Ladle into jars and seal. Allow to cool completely, and ideally set aside to mellow for a couple of months before opening.
