Beetroot Burgers

Ingredients (for 4 burgers)


  • 200g raw beetroot, grated
  • 2 large spring onions, finely chopped
  • 2 garlic cloves, crushed
  • 200g feta cheese, crumbled
  • Zest and juice of one lemon
  • Small bunch fresh mint, finely chopped
  • 1 medium free range egg
  • 5 tablespoons of plain flour
  • Olive oil
  • Mixed salad leaves


In a large bowl mix all of the ingredients together, leaving out 3 tablespoons of the flour.  Create four burgers out of the mixture and coat heavily in flour on both sides.  Fry in oil for about 10 minutes on each side, or until nicely crunchy and brown on the outside (the middle will remain a little looser).  Pop each burger in a burger bun along with some salad leaves!
