pasta and tomato sauce

Pasta & Tomato Sauce

Ingredients (serves 4)

  • Extra virgin olive oil
  • 1 onion
  • 5 cloves of garlic
  • 2 tins of tomatoes
  • 1/2 tin of water
  • A handful of fresh basil
  • A handful of fresh, chopped parsley
  • Zest of half a lemon
  • Flat tablespoon of brown sugar
  • Sea salt


Pan fry the onion in olive oil until soft, add all of the other ingredients and simmer for 15 minutes.  Cook the pasta, mix together and serve with a drizzle of olive oil.  You can add all sorts of other vegetables to this at the onion cooking stage, such as peppers or spring onions.  A favourite with kids, particularly with some mature cheddar grated on top.
