Greek beef stifado

Beef Stifado

Ingredients (serves 4)

  • 125g flour
  • 500g diced beef
  • Olive oil
  • 75ml red wine
  • 1 sprig of rosemary
  • 1 tbsp oregano
  • 200ml passata
  • 3 large ripe tomatoes, grated
  • 1 bay leaf
  • Salt & pepper
  • 750g very small white onions
  • 75ml red wine vinegar


Flour the beef pieces.  Heat some olive oil in a large pan and add the floured beef, frying until golden on all sides.  Add the wine, rosemary, oregano, passata, grated tomatoes, bay leaf, and salt & pepper to taste.  Let it simmer while you are preparing the onions.  In a large frying pan, use some more oil to sauté the onions whole, until golden brown.  Once the beef becomes tender, add the onions and the vinegar to the pan.  Simmer until the onions are soft and the sauce thickens.
